Easiest Mexican Rice

Anyways....

We like beans and rice. Correction: We like it. Hudson lives for beans and rice.

One of the first dishes I learned to cook from my mom was this one. You literally cannot screw it up. And I think it tastes way better than the rice from the Mexican restuarants.

Refried beans and Mexican rice is one of the cheapest, easiest, and fastest meals to throw together. We like to make them into burritos. So, if you have rice and salsa (who doesn't) and 10 minutes you can make this yummy, so-good-smothered-in-melted-cheese rice.

Ingredients:


(Makes 4 servings)

2 cups Instant rice (White or brown. Brown is healthier, but white is fluffier.)
3/4 cup Salsa
1 cup Water

Pour the water and salsa into a medium saucepan. Bring to boil.  Add rice. Return to a boil, cover,  then reduce heat and simmer on low for five minutes.
Remove from heat. Let sit covered for five minutes. Fluff with fork. Snarf it down.


So good it will have your 15 month old furiously signing "MORE!".
